The guy famous for his ravioli workshop who pleases the guests with his fantastic, well detailed classes, runs his own venture Nico’s Trattoria in Amsterdam and is currently running The LEFTOVER PROJECT with the aim of rescuing wasted farm vegetables and produce and creating weekly menus with it.
